Lomilomi Salmon Recipe

This Lomilomi Salmon luau recipe was provided courtesy of the Polynesian Cultural Center on the northeast shore of Oahu Island in Hawaii. The Polynesian Cultural Center's published luau recipes are similar to the recipes used for their Alii Luau Feast


In Hawaiian, lomilomi means to massage, or in this case to break the salmon into small pieces, which are then mixed with tomatoes, onions, and other small condiments, giving it a delicious tangy taste that goes great with poi. This style of fish preparation, introduced to Hawaii by early western sailors, is a delightful surprise and a must-have item at any luau.

Ingredients:
  • Whole Tomatoes, 4 each
  • Green Onions, 1/2 lb
  • Round Onions, 2
  • Diced Salmon, 3 lbs

    Instructions:
  • Core and rinse the tomatoes and cut each one into four slices. Place each tomato slice ona dicing cutter and hand push the cutter to dice. Place tomatoes in a large 12" plastic bowl.
  • Repeat the same procedure for the round onions,
  • Cut the green onions into thin slices and add them to the mixture.
  • Combine the salmon with the other ingredients and mix well.
  • Divide evenly into four bowls. Cover and place in refrigerator.
