Fijian Coconut Chutney

This coconut chutney is typical of those served in Fiji. The recipe includes grated fresh coconut, cilantro leaves, lemon juice, grated fresh ginger, green chile, and salt.

Ingredients for Coconut Chutney:
  • 2 cups of freshly grated coconut
  • 1 cup chopped cilantro leaves
  • 3 tablespoons of lemon juice
  • 1 tablespoon of finely chopped ginger
  • 1 green chile, finely chopped

    Instructions for Coconut Chutney:
    Combine all ingredients and chill for several hours to combine flavors.
