Chinese Almond Cookies

These Chinese style almond cookies are made with lard, brown sugar, natural almond flavoring, and blanced almonds. Making cookies with lard may seem like an odd choice, but lard is the ingredient that gives these cookies their authentic taste and texture.

Ingredients:
  • 2 cups of flour
  • 1/2 teaspoon soda
  • 3/4 teaspoon baking powder
  • 1 egg
  • 1/2 pound lard
  • 1/2 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1/2 teaspoon almond extract
  • blanched almonds
  • 1 or 2 egg yolks

    Instructions:
    Sift flour with soda and baking powder. sd beat egg and lard together. Add sugars and almond extract. Gradually mix in dry ingredients until well blended. Roll dough into 1 tablespoon size balls, place each one on a baking sheet, and press an almond into the center of each cookie. Brush with beaten egg yolk and bake at 350 degrees 15 or 20 minutes. Makes about 38 cookies if one tablespoon of dough is used for each one.
