Portuguese Sausage Recipe

A recipe for Portuguese Sausage. See also more Recipes from Hawaii, about Hawaii Dining and our Hawaii Travel Guide.

Ingredients

- 5 pounds (2.25kg) pork butt, untrimmed
- 10 cloves garlic, minced
- 3 tablespoonsof paprika
- 1 tablespoon of salt
- 1 tablespoon of ground coriander seeds
- 1 teaspoon of ground cinnamon
- 1 teaspoonof allspice
- 1 teaspoonof black pepper
- 2 teaspoons of cayenne pepper (optional)
- 14 cup of white wine vinegar
- 1/2 cup (120ml) cold water

Instructions

Cut the pork butt into cubes, but do not remove the fat, because sausage needs to have fat in it. Use a meat grinder to coarsely grind the meat or ask your butcher to do it for you. In a large bowl, mix the ground pork with the remaiing ingredients. Form the sausage meat into patties or stuff it into sausage casings. Grill the sausage until fully cooked.
