Pipikaula Recipe

A recipe for Pipikaula. See also more Recipes from Hawaii, about Hawaii Dining and our Hawaii Travel Guide.

Ingredients

- 2 pounds (910g) flank steak
- 3/4 cup (180 ml) soy sauce
- 2 tablespoons Hawaiian or rock salt
- 1 1/2 tablespoons sugar
- 1 garlic clove, minced
- 1 ginger piece, crushed
- 1 red chili pepper, crushed (optional, for spice taste)

Instructions

Cut the flank steak into strips about one inch wide

Mix the remaining ingredients and use it to marinate the beef in the refrigerator overnight.

OVEN DRYING:
Heat oven to 175 degrees F (79 degrees C). Lay the meat strips across the metal oven racks. Dry the meat in the ovne for 7 hours.

SUN DRYING:
Lay the meat STips on the metal racks of a drying box. Place the box in the hot sun for two days, duirng daylight hours only (bring the dry box inside every night).
