Baked Coconut French Toast

This French toast is baked rather then fried and it is coated with coconut on both sides before being cooked.

Ingredients
  • 12 eggs
  • 1-1/4 cups of milk
  • 2 teaspoons of sugar
  • 1 teaspoons of cinnamon
  • 14 slices of day-old bread
  • 1 (7 ounce) package of flaked coconut
  • Maple Syrup or other flavor syrup

    Instructions
    Beat the eggs, milk, sugar, and cinnamon together in a large, shallow dish. Dip slices of bread into the mixture and let them soak at least one minute on each side. Coat each slice of bread with coconut on both sides, and lay in a single layer in a greased baking dish. Bake at preheated 475 degrees for 5 minutes on each side, or until golden and cooked through. Serve with syrup. Makes 14 slices.
