Chef Mavro
Owner and chef George Mavrothalassitis is from Provence, France
and before he opened his own restaurant he was the chef at
Halekulani's La Mer Restaurant and the Seasons Restaurant at the Four
Seasons Wailea. Dinners cost approximately $40 to $45 and
multiple course meals are available for $70 to more then $200.
Chef Mavro's Restaurant was given a five diamond rating
by the Automobile Club of America for the first time in 2009.
La Mer
An award winning French restaurant at the
Halekulani Hotel in Waikiki. Dinners cost $35-45
and multiple course meals are available for $100+.

Alan Wong's Restaurant
Chef Alan Wong specializes in blending Asian and local
Hawaiian cuisine at his award winning Honolulu restaurant.
He also has a restaurant in Japan and he owns the Pineapple
Room at Ala Moana Center in Honolulu.
Price for dinner: approximately $35 to $85.
Azure
This new fine dining restaurant opened in the
Royal Hawaiian Hotel after it was extensively renovated
in 2008 and 2009. The restaurant's executive
chef is Jon Matsubara.
Bali by the Sea
Bali by the Sea is an open air fine dining restaurant at the Hilton
Hawaiian Village Hotel which specializes in combining flavors
and ingredients from many different Pacific Rim countries.
Bistro at Century Center
The Bistro at Century Center opened in 2003
and it specializes in traditional continental cuisine
and fine wines.

Sam Choy's Diamond Head Restaurant
At one time Sam Choy had a fine dining restaurant at 449
Kapahulu Avenue, on the Diamond Head end of Waikiki,
above the Hee Hing Chinese Restaurant. Sam Choy's Diamond
Head Restaurant closed on June 29, 2008.
After Sam Choy moved out, Sergio's Italian Rerstaurant
moved out of the Hilton Hawaiian Village resort and into
this spot. I think there is still a Sergio's at the HHV
but I believe that one is more of a family restaureant now
then a fine dining restaurant.
Surf Room at the Royal Hawaiian Hotel
When The Royal Hawaiian Hotel was refurbished in
2008 and 2009 its Surf Room Restaurant was closed
and a new high end restaurant called "Azure" was
opened.
